A few weeks ago I discovered the goodness that is Ecopolitan. (For reference, I ordered the Rawvioli and my friend ordered the Green Burrito.) It easily became my new restaurant crush as it’s one of the few places with a completely DELICIOUS raw, vegan menu. If you’re not in the Minneapolis area, you should still check out the website so you can get the 7-day menu planner. What’s not to love about a place with a mission statement like this?

"Eating should make sense and be simple.  It should bring health and wellness to your mind, body, spirit, and your community.  Believe that people can change and improve their conditions of life.  Be gentle with yourself, and those around you.  Commit to making a difference, even if it’s only a small one to begin with.  This is the mission of Ecopolitan."

…so I am commemorating it with the creation of a blog.

Allow me to introduce myself:

I’m Alex, a 23 year-old gal that hails from Minneapolis, Minnesota. You may be familiar with the city due to it’s recent acquisition of some interesting titles (this anomly included) or you may know us for our incredibly ridiculous weather

Either way, I decided to begin my blog by telling you where I’m from, because like the other vegetarians out there, we find origins in general to be quite important. [Sorry for the gruesome link.]

After years of what my family would call “excessively picky eating habits,” I decided to give vegetarianism a whirl. After all, I only ate poultry and hamburgers (and only when someone else made them) so it didn’t seem like that much of a dietary sacrifice. I’m only a month in, but I already feel like this is a lifetime thing for me. [Currently reading Jonathan Safran Foer’s Eating Animals which is solidifying everything.]

I joined Tumblr because I’ve heard it attracts those who like to share, so expect recipe-swapping, reading recommendations and general commentary regarding all things veg!
