Just because it doesn’t have meat doesn’t mean it’s not tasty.
Bought Archer Farms’ cheese & white wine risotto, added steamed cauliflower, fresh chives, cracked pepper and a dash of the best Parmesan in the U.S. (seriously, pick some up—it’s killer). The result? Highly edible.

Bill Clinton went vegan.
Former President Clinton now considers himself a vegan. He’s dropped more than 20 pounds, and he says he’s healthier than ever. His dramatic dietary transformation took almost two decades and came about only after a pair of heart procedures and some advice from a trusted doctor.
The former president’s goal is to avoid any food that could damage his blood vessels. His dietary guides are Ornish and Dr. Caldwell Esselstyn Jr., who directs the cardiovascular prevention and reversal program at The Cleveland Clinic Wellness Institute. Both doctors have concluded that a plant-based diet can prevent and, in some cases, actually reverse heart disease.
“It’s turning a ship around before it hits the iceberg, but I think we’re beginning to turn it around,” Clinton said.

My friend Allie (of this Tumblr namesake) recommended lentil tacos when I first became a vegetarian. They’re delicious, but mine definitely weren’t as pretty as hers.

A few weeks ago I discovered the goodness that is Ecopolitan. (For reference, I ordered the Rawvioli and my friend ordered the Green Burrito.) It easily became my new restaurant crush as it’s one of the few places with a completely DELICIOUS raw, vegan menu. If you’re not in the Minneapolis area, you should still check out the website so you can get the 7-day menu planner. What’s not to love about a place with a mission statement like this?
“Eating should make sense and be simple. It should bring health and wellness to your mind, body, spirit, and your community. Believe that people can change and improve their conditions of life. This is pretty awesome—portion control plates courtesy of in.gredients’ stellar blog. Think of how easy it’d be to teach kids how to correctly formulate their diet if families used these color-coded plates at each meal!
